The Romesco (sometimes also called Romesco de pescado or Romescada; sometimes even Romesquet or Romescu) is a traditional fish stew in Tarragona, particularly in the fishing district of The Serrallo.

Like all great dishes and without exaggeration, the Romesco has a lot of magic. A few affordable ingredients: ancho pepper, garlic, nuts and little else, expertly configured in the casserole as the base of a fish stew, give rise to an outstanding result and unsuspected nuances that turns out to be much more than the sum of its parts.
